This Salmon, Avocado & Egg Power Bowl has become one of my go-to lunches. It’s simple, gluten-free, and full of protein and healthy fats that help me stay clear-headed and present for my clients.

Salmon, Avocado & Egg Power Bowl Recipe
Ingredients (Serves 1–2)
4–6 oz cooked salmon
2 hard-boiled eggs, halved
1 ripe avocado, sliced
2 cups baby spinach or mixed greens
1 tbsp olive oil
Juice of ½ lemon
Salt & pepper to taste
Optional Add-Ins:
Cherry tomatoes
Cucumber slices
Fresh dill or parsley
Instructions
Add greens to the base of a bowl or container.
Top with salmon, eggs, and avocado.
Drizzle with olive oil and lemon juice.
Season with salt and pepper and enjoy.
